Ginger Snap with 02 Spent Grain Flour

Ingredients

200 g wheat flour

75 g 02 Spent Grain Flour 

1 tsp baking powder

1 tbsp cocoa powder (unsweetened)

1 tsp cinnamon

1 tsp ground cardamom

1 tsp black pepper

0.5 tsp ginger

80 g dark syrup

125 g soft brown sugar

125 g soft butter

1 egg

Here's how

  1. Mix the wheat flour and 02 Spent Grain Flour and add all the spices to the flour mixture.
  2. Whisk the syrup, soft brown sugar, soft butter and eggs well together.
  3. Quickly combine the flour and egg mixture together. It should come together completely, but it will quickly become very soft and sticky, so do not knead it.
  4. Place the dough in the fridge for min. 30 minutes before rolling it out thinly between two pieces of baking paper.
  5. Cut out shapes with a little space between them so they don't melt together in the oven.
  6. Bake for 8-9 minutes at 175C (fan oven).
  7. Let the cakes cool on a wire rack. When they are completely cold, they can be decorated with icing.
