Hot Cross Buns with 01 Spent Grain Flour

Here's how
- Heat water, butter and sugar to 40C to allow butter to melt. Remove from the heat. Add yeast and rest for 15 mins.
- Blend flour, Agrain and salt together. Pour in the warm mixture and knead until it forms a soft dough. Leave dough to prove at 45C covered in a bowl for 1 hour.
- Mix fruit and spices and cover and prove again for 1 hour.
- Line a baking tray with parchment paper.
- Once the dough has risen, divide it into equal portions (70g). Roll into smooth balls and place on the baking tray 2cm apart. Cover the balls with cling film and leave to rest for 1 hour.
- Preheat the oven to 180C. Prepare the pastry cross mixture and scoop into a piping bag.
- Once they have risen, pipe on the cross and bake in the oven for 17 minutes at 180C (fan).
- Use a pastry brush to glaze the buns while hot from the oven.
- Place on a cooling tray then store in a cool dry airtight container. Enjoy warm or toasted with salted butter.
