Pumpkin Loaf Cake with 01 Spent Grain Flour

Here's how
- Preheat the oven to 180C fan. Grease a metal loaf tin and set aside.
- In a large bowl, mix the flour, Agrain, baking soda, salt and spices.
- In another bowl, whisk together the eggs and sugar. Add the pumpkin, oil and orange juice and zest, and mix.
- Pour the wet ingredients into the dry ones and use a spatula or wooden spoon to mix them together until combined. Do not over-mix. The mixture should be thick but still runny. If it is too thick, add a splash more orange juice or milk.
- Gently fold in the nuts or chocolate chips, if using.
- Pour the batter into a greased loaf tin. Bake for 60-65 minutes, covering with tinfoil half way to prevent the top from browning.
- After baking, allow the cake to cool completely before removing from the tin.
- Ice the pumpkin with your favourite frosting (we used cream cheese frosting) or enjoy just as it is!
