Pumpkin pie with 03 Spent Grain Flour

Ingredients

300 gr finely grated pumpkin (e.g. Hokkaido)

250 gr butter

175 gr sugar

75 gr soft brown sugar

4 eggs

220 gram baking flour

30 gr 03 Spent Grain Flour

1 tsp cinnamon

2 tsp baking powder

1/8 tsp ground cloves

¼ tsp salt

Grated zest from one orange

Here's how

  1. Take eggs and butter out of the refrigerator 1 hour before you begin.
  2. Mix the butter and sugar. Then, add the eggs one at a time and the grated zest from an orange.
  3. In a separate bowl, combine the flour, spent grain grain flour, cinnamon, ground cloves, salt, and baking powder. Gently fold this mixture into the egg/sugar mixture.
  4. Finally, fold in the finely grated pumpkin.
  5. Transfer the batter into a greased baking tin, approximately 25x35 cm, and bake at 170 degrees Celsius for about 40 minutes.
  6. Cakes that contain spent grain flour usually need a bit more baking time, so keep an eye on the cake.
  7. Dust the cake with icing sugar or serve it with your preferred topping, such as creme fraiche with 38% fat content, orange zest, and toasted hazelnut flakes.
